Quick and Healthy Will be Buzz Words in Nutrition in 2003

Healthy, low-calorie, conveniently packaged foods, snacks and beverages — requiring minimal or no preparation — will guide food trends for the coming year, predicts Dr. Ralph Lane, UA professor of nutrition and hospitality management.

"Nutritionally balanced, prepared, frozen gourmet meals, as well as chilled versions and lunch and dinner 'kits,' will gain in popularity," says Lane.

"Food bars fortified with soy, whole grains, vitamins, minerals, and amino acids for specific times of day, specific health needs, specific ages and gender will increase in availability," predicts Lane.

Lane says snack foods will go light, with combined sweet-salty snacks gaining in popularity. Nutritionally adequate snacks that serve as meals, on the go, will be offered.
